Peach Pie...



Or also known as Kevin's only temptation. Give him a candy bar or yummy treat and he can save or even resist it FOREVER!!!!!! Make him a peach pie and he is a goner! Blueberry is a close second. I have made many recipes and crusts and this is my favorite of both o and Kev's too. Is it easy? Well ofcourse!

Pie Filling
4 c. sliced peaches
1/4 c. Minute tapioca
3/4 c. sugar
1 tbls. sugar
(Also found on the back of the Minute tapioca box :))

Mix this all together and let sit for 15 min in a bowl. While waiting make your crust.

Crust
2 1/2 c. flour, little extra to roll out on
1 c. butter (2 sticks) VERY cold cut into little pieces
1 tsp. salt
1 tsp. sugar
6-8 tbls. ice water

Combine flour, sugar, and salt together in bowl. Mix in your very cold butter with a pastry cutter. (I always used a fork until my mom gave me an awesome pastry cutter.) Mix until it starts to resemble a coarse meal mixture. Add ice water 1 tbls at a time until its wet enough to start to form a dough. Dump onto counter and knead just enough to form 2 disc shapes and place in saran wrap and place in fridge for an hour. It can stay in there for up to a couple of days. When you take it out of fridge let it sit out for 5-10 min. Then roll out your bottom and put in pie pan. Put your filling in and place your top on. make a couple slits in crust then
Bake @ 400 for 40-50 minutes. I do mine for 40 and its perfect.
